BISCOTTI DI MANDORLE
ALMOND MACAROON COOKIES
6 egg yolks
2 cups confectioner’s sugar
¼ teaspoon salt
1 teaspoon grated orange rind
1-1/2 cups flour
6 egg whites
1-cup coconut
1 ½ cups blanched and slivered almonds
Combine egg yolks, sugar salt and orange rind in bowl, and beat until thick and creamy. Stir in half of flour. In another bowl, beat egg whites until they stand up in stiff peaks. Fold one half of this into flour mixture. Add rest of flour then fold in rest of egg whites and coconut. Preheat oven to 350 degrees. Grease baking sheet with butter and dust with flour. Place cookie dough into a large pastry bag and squeeze out rounds about 3 inches in diameter. Sprinkle with slivered almonds overtop of each one. Bake until cookies are delicately browned. Makes 2 dozen cookies
